EGG Smart

Food for thought....

I read in an article from Everyday Food magazine October 2009 issue that the egg is full of great nutrition that we should incorporate into our diets probably more than we do already.

The article states:

What's in an egg?
An egg is a comp[act nutritional powerhouse, providing 6 grams of complete protein, plus a dozen of iron and vitamins D, B12 and B2. Each large one contains just 75 calories.
Fuel for your day....
Because eggs are an excellent source of protein, they help you feel fuller longer, give sustained energy, and may also help build and preserve muscle strength.
Don't toss that yolk....
Those egg white omelets may not be your healthiest choice. Although the whites contain the majority of the protein, the yolks are actually the most nutrient-dense part of the egg. Besides protein, the yolk contain lutein, which is especially important for eye health, choline, essential for brain function, and folate, vital to cell production.
